Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tbsp melted butter
  • 1 cup fresh blueberries

Instructions

  1. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  2. Make a well in the center and pour in the milk, egg, and melted butter. Mix until just smooth — don’t overmix.
  3. Gently fold in the blueberries.
  4. Heat a lightly oiled griddle or frying pan over medium-high heat.
  5. Pour about 1/4 cup of batter per pancake onto the griddle.
  6. Cook until bubbles form on top and the edges look dry, 2-3 minutes, then flip and cook until golden brown, another 1-2 minutes.
